Bold Salad of Fennel, Red Grapefruit, and Avocado
This simple recipe takes about 15 minutes to prepare and serves four.
2 Red Grapefruits
2 Avocados
1 Large Fennel
1/2 Cup Mint Leaves
1 Tbsp Lime Juice
1/2 Cup Nut Oil
1 Tsp Groud Coriander
Salt and Pepper
1. Cut grape fruit into segments.
2. Cut avocados into slices and julienne fennel
3. Mix ingredients in a bowl, reserving a few mints leaves for garnishing.
