Lima Bean, Mint and Garlic Hummus
Here is a delicious recipe that is a great source of protein and fiber!
Serves 4 – Prep time 30 minutes or less
Ingredients:
1 12-oz. package of frozen baby Lima beans, rinsed and drained (plus more for garnish optional)
2 TBS olive oil (plus more for garnish optional)
1.5 TBS of lime juice
1 clove garlic, minced
2 TBS chopped fresh mint
Directions:
1. Cook Lima beans in saucepan with a 1/2 cup water 6 minutes. Remove from heat, cover, and let stand 5 minutes. Rinse under cold water and drain.
2. Puree beans with oil, lime juice and garlic in food processor until smooth. Season with salt and pepper. Add mint; pulse 30 second to combine. Garnish with whole beans and oil, if desired.
Enjoy with pita bread!
